AN IMPORTANT STEP FOR ARTISANAL GOURDES
Before you start enjoying your mate cups, you must first scrape. This will protect your new gourd from mold and improve the taste of your drink. There are many ways to cure a gourd and any one of them is probably great, but in this article I am going to show you two methods. Let’s start with the traditional Gaúcho way.
Now that you have all of the items listed above, here’s how you can scrape your gourd:
Open your bag of yerba and fill your gourd 3/4 full.
Add hot water until it reaches the edge of your gourd. Warning, do not pour boiling water , this may brake your mate cup. Wait a few minutes for the water level to drop again. Fill it again.
Leave this infusion inside your calabash for about 48 hours, so that the sides of the gourd can completely soak up the mixture. This will give a best taste to future infusions as well as to reinforce the structure.
After 2 days of infusion, empty your gourd then start to scrape the “peels” with a teaspoon. From time to time rinse your gourd and then continue to scrape.
Your mate cup is now ready! You can prepare your first mate. Know that the more you use your gourd, the better the taste will be.
